You must have:
One pound Italian sausage
One clove garlic, minced
Two (14 ounce) cans beef broth
One (14.5 ounce) can Italian-style stewed tomatoes
One cup sliced carrots
One (14.5 ounce) can great Northern beans, undrained
Two small zucchini, cubed
Two cups spinach – packed, rinsed and torn
One fourth teaspoon ground black pepper
One fourth teaspoon salt
Directions
You need a Dutch oven and brown the sausage with garlic. Beat in broth, tomatoes and carrots, and season with salt and pepper. After adding all these ingredients, reduce heat, cover and cook for fifteen minutes. Blend beans with liquid and zucchini then cover and cook for another fifteen minutes. Remove the mixture from heat and add spinach. Replace cover allowing the heat from the soup to cook the spinach leaves. You can serve the soup after five minutes.
