You are required to have:
One pound sweet Italian sausage, casings removed
One cup chopped onion
Two cloves garlic, minced
Five cups beef broth
Half cup water
Half cup red wine
Four large tomatoes – peeled, seeded and chopped
One cup thinly sliced carrots
Half tablespoon packed fresh basil leaves
Half teaspoon dried oregano
One (8 ounce) can tomato sauce
One and half cups sliced zucchini
Eight ounces fresh tortellini pasta
Three tablespoons chopped fresh parsley
Directions
You must have a Dutch oven having five quart, brown the sausage. After sometime, remove sausage and drain. During this process reserve one tablespoon of drippings. Cook onions and garlic in drippings. Blend in beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce and sausage. Boil all these ingredients. After boiling reduce heat and cook for thirty minutes. While cooking, do not cover the pot. Scan fat from soup and mix in zucchini and parsley. Cover and cook for thirty minutes, add tortellini during the last ten minutes. Shake over Parmesan cheese on top of each serving.
