Ingredients
Two quarts chicken broth
One quart water
One store-bought roast chicken
Three tablespoons vegetable oil
Two large onions, cut into medium dice
Two large carrots, peeled and cut into rounds or half rounds, depending on size
Two large stalks celery, sliced 1/4 inch thick
One teaspoon dried thyme leaves
Directions
Cook broth and water over medium high heat in a large soup kettle. In the mean time, take apart chicken meat from skin and bones and set aside. Then add skin and bones to the cooking broth. After adding, reduce heat to low, partly cover and cook until bones release their flavor. It usually takes twenty to thirty minutes. Strain broth via strainer into a large container and set aside. Throw away skin and bones. Once again place kettle to stove over medium high heat. Then add oil, onions, carrots and celery. Cook for eight to ten minutes. Then add chicken, broth and thyme and cook. Soup is ready to serve.
